Red Lentil Curry – Instant Pot Easy & Flavorful  – Can be a side dish or main dish – wonderful flavors

Hey everyone, this is one easy amazing Red Lentil Curry recipe that you can do in the instant pot and there’s no need to pre-soak your lentils!
Curry and lentils and basmati rice, the key to the best comfort food that you can make and it’s so quick and easy!

2 cups red lentils (Bob’s Red Mill)
2 cups vegetable or chicken broth
1 1/2 cup water
14 oz can of diced tomatoes with juice
1/2 cup chopped yellow bell pepper
1/2 cup chopped yellow red pepper
1/2 cup chopped white onion
1/3 cup chopped celery stalk
2 TBSP Sonya’s Sweet Spicy Jalapeños, chopped fine
2 TBSP olive oil
3 TBSP ground yellow curry
1 TBSP minced garlic
1 TBSP minced ginger
1 TBSP ground coriander
1 TBSP lime juice
1 tsp sea salt
4-5 springs chopped cilantro for garnish

Serve over basmati rice

Add chopped produce to the instant pot on sauté setting and sauté until onions are translucent
Add Spices, tomatoes and broth,
Add red lentils (rinsed)
Set Instant Pot for 10 minutes on High
When finished cooking, allow to sit for 10 minutes then do quick pressure release.
Stir well and serve!
Garnish with cilantro
